บทคัดย่อ

บทความนี้ศึกษาบทบาทของอาหารพื้นบ้านอีสานอย่าง "หม่ำ" ในฐานะปรากฏการณ์ทางสังคมที่รสชาติ ความรัก และอาชีพ หลอมรวมกันเป็นโครงสร้างเดียว โดยใช้กรณีศึกษา "หม่ำตำนานรักชัยภูมิ" เพื่อตั้งคำถามว่า อาหารพื้นบ้านทำงานอย่างไรในฐานะเศรษฐกิจศีลธรรมของแรงงานอาหารนอกระบบในสังคมร่วมสมัย งานวิจัยนี้มีวัตถุประสงค์สามประการ ได้แก่ (1) วิเคราะห์การประกอบสร้างรสชาติ ความรัก และอาชีพในการทำหม่ำให้เป็นโครงสร้างทางสังคมเดียวกัน (2) พัฒนากรอบแนวคิด "รสชาติแห่งความรัก" (Taste of Love) เพื่อขยายขอบเขตสังคมวิทยาอาหารและสังคมวิทยาอาชีพให้มองเห็นรสชาติและความรักในฐานะมิติสำคัญของการดำรงชีพ และ (3) เปิดบทสนทนาทฤษฎีระดับโลกจากประสบการณ์ของแรงงานอาหารฐานรากในเอเชียตะวันออกเฉียงใต้ ระเบียบวิธีวิจัยใช้ชาติพันธุ์วรรณนาเชิงทฤษฎี ลงสนามต่อเนื่อง 12 เดือน (มิถุนายน 2566 – พฤษภาคม 2567) ในอำเภอเมืองชัยภูมิและอำเภอภูเขียวกับผู้ให้ข้อมูลสำคัญ 15 คน ประกอบด้วยผู้ผลิตหม่ำ ผู้ประกอบการ และผู้บริโภคประจำ กลุ่มละ 5 คน ผ่านการสังเกตแบบมีส่วนร่วม บทสนทนาชีวิต และการฟังเรื่องเล่ารสชาติ การวิเคราะห์ใช้การวิเคราะห์ธีมเชิงสะท้อนกลับ (reflexive thematic analysis)

ผลการวิจัยชี้ว่าหม่ำทำหน้าที่เป็น (1) เรื่องเล่าของความรักและการรอคอยในชีวิตคู่และครัวเรือน (2) อาชีพที่ไม่แยกชีวิตออกจากการทำงาน โดยครัวเรือนทำหน้าที่เป็น "โรงงานแห่งศีลธรรม" (Moral Workshop) (3) เศรษฐกิจศีลธรรมของอาหารที่ตั้งอยู่บนหลัก "ขายพออยู่ ไม่ขายพอรวย" และการปฏิเสธตรรกะการขยายตัวแบบทุนนิยม และ (4) อาชีพที่ไม่พรากชุมชน ซึ่งรักษาโครงสร้างครอบครัวและละแวกบ้านไว้ได้ในยุคที่การย้ายถิ่นเป็นเรื่องปกติ ในเชิงทฤษฎี บทความเสนอกรอบ "รสชาติแห่งความรัก" ซึ่งเชื่อมรสชาติในฐานะทุนทางศีลธรรม ความรักในฐานะ "แรงงานเชิงสัมพันธ์-ศีลธรรม" (Relational-moral Labor) และอาชีพอาหารในฐานะเศรษฐกิจศีลธรรมเข้าด้วยกัน บทความยังเสนอมโนทัศน์ "จริยศาสตร์ของการรอคอย" (Ethics of Waiting) เพื่อท้าทายและขยายกรอบ Slow Food แบบยุโรปจากมุมมองของ Global South กรอบทั้งหมดมีส่วนช่วยขยายบทสนทนาสังคมวิทยาอาหารและแรงงานจากซีกโลกเหนือไปสู่ประสบการณ์ของ Global South และยืนยันว่า "ความรัก" ควรได้รับการพิจารณาในฐานะหมวดวิเคราะห์หลักของระบบอาหารร่วมสมัย มิใช่ความรู้สึกที่อยู่นอกการวิเคราะห์
